So Persimmon, aka Sharon Fruit, I have to be honest and say that I still don't like them. I may try using them in a cake if they're in the Super 6 again but otherwise I think I'll stick to not buying them.
Baked Persimmon
Ingredients:
Persimmon
Ground Cinnamon
Ground Ginger
Brown Sugar
Coconut Oil
Method:
- Preheat the oven to 180°c/160°c Fan/Gas Mark 5.
- Chop the fruit in half across the middle.
- Put the fruit in a baking tray, cut side up, place a bit of coconut oil on top and sprinkle with the cinnamon, ginger and sugar. Cover with tinfoil.
- Bake for 40-50 minutes until the fruit is soft but still holding it's shape.
- Uncover and put under a high grill for 5-10 minutes until golden.
- Serve with plain/greek yoghurt or vanilla ice cream.
