Swede...

It has turned quite cold all of a sudden *shivers*. On Saturday evening I had to de-ice not only the outside but also the inside of my windscreen after having dinner at a friend's and it wasn't even 11pm! I'm so glad I've decided to walk to work rather than drive these days as getting up earlier just to de-ice the car is not my idea of fun.

I'm currently trying to empty out my freezer so I have space to start buying some bits toward the Christmas dinner. I actually have less meat in there than I thought so hopefully in the next few weeks I'll have been able to work my way through that draw at least. 

The cold weather just calls for comforting food and todays offering definitely falls into the category for me! I'm using the swede from the Aldi Super 6 in this one.


Cottage Pie with Swede & Carrot Mash Top
Ingredients:
400g - 500g Lean Mince 
1 Onion - Diced 
1 Leek - Diced 
1 Clove Garlic - Crushed 
300g Carrots - Peeled & Diced 
500g Swede - Peeled & Diced 
1tbsp Tomato Puree 
2tbsp Plain Flour 
500ml Beef Stock 
25g Butter

Method:
  1. Put swede and 200g of carrots into a large pan of cold water and bring to the boil. Boil for 15 minutes or until mashable and drain. Mash the carrot and swede, or whizz in a food processor, with the butter and keep aside.
  2. Whist the carrots & swede are heating, place the mince in a large frying pan or wok and brown for 6 minutes.
  3. Add the onion, garlic, leek and remaining carrots and cook for 3 minutes. Add the flour and cook for another minute.
  4. Now add the stock and tomato puree give it a stir and season with black pepper. Cover and simmer for 10 minutes then remove the cover and simmer for a further 5 minutes.
  5. Place the meat mixture in a baking dish and top with the mash. Place under a medium grill for 4-5 minutes until golden brown.
  6. Serve & Enjoy


I actually made this last night but didn't end up eating it until today but I'm really happy with how it turned out! I just served it with some peas and sweetcorn on the side and it was perfect after a busy day at work :) You should get 4 portions out of this.
