The new Super 6...

The new Aldi Super 6 went on sale today and they're 59p each again. There's a good selection I think this time and they're all things I would eat or cook with so I'm feeling good about the next two weeks! I might use more than one of them in some dishes so might not post 6 recipes this time but we'll see how it goes :)

So what do we have to play with?
Green Beans
Baby Maris Peer Potatoes
Red Onions
Swede
Leeks
Conference Pears

I've actually already got cracking with a recipe as I already had 2 of the Super 6 in so no having to wait until Sunday this week! :)
I finally got round to collecting my Crockpot Slow Cooker from my parents house today and decided I'd test it out for the first time today.
  I had some sausages and leeks in the fridge that needed using up and this is what I came up with.

Sausage, Leek & Butter Bean Casserole

Ingredients:

4 - 8 Sausages
1 Leek - Sliced
1 Red Onion - Sliced
1 Clove Garlic - Crushed
1 Carrot - Chopped
1 Tin Chopped Tomatoes
1 Tin Butter Beans
300ml Chicken Stock
1 Bay Leaf
1/2tsp Dried Thyme
2tbsp Cornflour
Equipment:

Frying Pan
Slow Cooker

Method:

  1. Brown off the sausages in a frying pan for about 5 minutes. 
  2. Place everything excluding the cornflour in the slow cooker.
  3. Cook on High for 4-6 hours in the slow cooker.
  4. If the sauce is a bit thin for your liking, mix the cornflour with a little cold water to made a paste and stir into the casserole and cook for a further 15 minutes.
  5. Serve & enjoy!
I just had this with some bread & butter on the side and that was just right for me but some boiled potatoes would be good too :)

I've not tried this in the oven but I guess I'd try cooking it at 180°c/160°c Fan/Gas Mark 4 for 1 - 2 hours.
